It is then matured in the barrel for two months.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eDuring maturation, the gin develops a rich ruby hue, gentle sweetness and layers of dark berry fruit, subtle spice and soft oak. Its berry fruit and subtle sweetness also make it well suited to a Shiraz Gin Sour, Negroni or spritz-style cocktail.
