Our Story
Tucked between the forest, lake and ocean of Durras North, Durras Distillery is a small, family-run distillery shaped by the landscape and community of the NSW South Coast.
Our Distilling Journey
In the heart of Durras North, surrounded by the natural beauty of the NSW South Coast, Durras Distillery was founded by John Moss with a simple aim: to create distinctive spirits with care, character and a strong connection to place.
Using a custom-built 120-litre copper still, we produce small batches of around 75 bottles at a time. This allows us to remain closely involved in every stage of production and refine each spirit by hand.
Our range has grown from our original Signature Gin to include Shiraz Gin, Pink Grapefruit and Lemon Myrtle Gin, and Durras Moonshine. Each product has its own recipe, process and story, while remaining grounded in the landscape and character of Durras.
Our Gin Craft
Australia’s growing distilling community has produced an extraordinary range of gins, with each distiller using different botanicals, recipes and techniques to create something unique.
At Durras Distillery, our gin begins with room-temperature maceration. We steep carefully selected botanicals in high-quality spirit for around two weeks, allowing the citrus, spice, berry and herbal flavours to develop naturally. Wherever possible, we source ingredients locally, including produce grown in Durras and supplied from within the village.
The macerated spirit is then strained into our custom-built 120-litre copper still. Each distillation takes around five hours, during which we carefully select the portions of spirit that capture the flavours and character we are looking for.
These are then blended to create the balanced profiles found across the Durras Distillery range. It is a slow, hands-on process that gives us close control over every batch, from preparing the botanicals through to filling, labelling and finishing every bottle by hand.

Inspired by Durras
Durras Distillery sits between the forest, lake and ocean in Durras North. It is a place shaped by quiet beaches, spotted gums, native wildlife and the meeting of Durras Lake with the sea.
The landscape influences both our spirits and how we make them. We use locally grown and sourced ingredients wherever possible, including fruit from Durras and botanicals supplied from within the village.
We also work carefully to reduce the impact of our production. Our still is powered using solar energy and is run when there is sufficient solar generation to complete a distillation. Tank water is filtered and sanitised before being used to bring our spirits to bottling strength. Cooling water is captured and reused, spent botanicals are composted, and recycled packaging is used wherever practical.
Our labels celebrate familiar South Coast landscapes and landmarks. From Durras Lake and North Durras Beach to Wasp Island and the old barn near Benandarah, every bottle carries part of the area that inspired it.
